You're mixing apples and oranges.
Of course the Dean Martin Celebrity Roasts were tame. They aired on network television before 11:00 PM. You can't compare something like that to a nightclub stand-up performance, or something airing on a pay per view channel or a streaming service. I don't know if Comedy Central has commercial sponsors, but if they do, they will be companies that aren't afraid to be associated with controversy. Nothing edgy is ever sponsored by Proctor and Gamble, Johnson & Johnson, or McDonald's.
Show me ANYTHING today that comes close to the type of humour published in National Lampoon before the mid-1970's, and it was considered mainstream. You can't even buy a magazine that shows tits from a newsstand or convenience store anymore.
