More scientific illiteracy.
Everything in science is a theory because science always accepts the possibility that future evidence and theories might offer a better explanation.
As for evolution, we have plenty of evidence that it is happening and have a fairly good understanding of how. A simple example is the way covid has mutated allowing it to spread more easily but be less deadly. The random mutations happened as DNA was replicated and the mutations that provided a survival/reproductive benefit are more likely to get passed on.
There is also a continuously running experiment on evolution of fruit flies that has been going on for over 1500 generations of fruit flies.

If you want to look at the Eastern Romans/Byzantines, I'd recommend the conflict against Arian Christianity but there is plenty written on the adoption of Christianity in the first place. Essentially, one the boss and all the other big shots were pushing it, your choices were to either follow along or be left out.
There is actually a distinct evolutionary group they are referring to commonly as dark-flies (one group has been in a light free environment). if you really want you could look up the scientific name for the new species.
The scientists ordered the fruit flies to maintain social distancing. They are watching how long it will take for the flies to develop a middle finger and show it to them.
