I understand that a company can term someone at any time and for any reason. On the other hand, you might not get any severance if your contract says you're on probation for 3 months and they fire you in that window. It depends on the exact working of the contract and how good your lawyer is.

Legal issues asides, my earlier point was about how silly it is for a recruiter to use a paper based test to screen for a role that requires techology. Then again, just about all jobs today require technology and Internet access.

It depends.
There are multiple types of tests used for different reasons.
You can absolutely have tests primarily as summative assessments.
You can also use them as teaching tools and part of the formative work.
