I think you need to start by asking what you are willing/ok to do. If you are ok with generally having sex (FS, BJ, DFK, DATY) with random guys, the SP route is it. If you prefer to be more timid, massage customers, give happy endings but no major sexual activity, you go the MP/MPA route. It really depends on your mindset and what you are comfortable with. Granted you could go either way and quit immediately if it isn't for you but better to try and choose the right area the first time around. Unfortunately, you could try one thing and have one or a few negative experiences that cause you to quit but you'll still have experienced those negatives.
If you go the MP route, there's a thread somewhere (think under massage) where another lady has asked for some advice. There are a variety of spas/MP's/bodyrub places, each with a different look/feel/expectation. There are some (e.g. Allure) where girls are very sensual but low mileage is expected. There are other places (SRM, HFH, AGS, Flirt, Muse) where there is a mix of liberal providers and more low mileage/restrictive providers. Then there's other places where mileage/extras are the norm (Taboo, Vivid, Minx, some Premier). Frankly, in these places, you might be doing a lot of work similar to that of an SP. All MP's though are fairly safe - plenty of people, cameras, etc.
If you go the SP route, you need to be comfortable providing basic GFE-type services as listed above. You can go indy or agency. An agency will handle most of the management/advertising/logistics for you but of course, they take their cut and you have little control over the appointments scheduled during your shift. IMO, no real screening is performed as any random customer can book. I assume though that most customers are good because they realize behaving badly means they will get banned and now they can't see any other girls at the agency.
If you go Indy, you'd be responsible for your own marketing/logistics. Could be as simple as using Backpage, posting a few pics, a little blurb, and providing phone/email. Or you could become a paid Terb advertiser and post ads here or on other boards/sites (e.g. **********, TER, VIPFavors). You could even set up your own website too but this takes time and money. The obvious benefit of being indy is you are your own boss. You set the rules, the timings, the locations, etc. You can conduct your own screening which for some involves obtaining references from other ladies previously seen.
I think Mr. Bret is spot-on with his suggestion - start at an MP first. There are a few that have older women working there (e.g. HFH). Speak with a few women who work at the places you are applying to.

As far as discretion, most ladies do not work under their real names. Most pics do not show faces or faces are blurred. Tattoos are usually covered up. Stat accuracy is debateable. Chances are high you'll never be found out. That said, as the saying goes, don't shit where you eat. Perhaps finding a place that is a good distance from your home is wise. A guy like myself frequents MP's that are 15-20 min away. Most guys do that or go to places near their work. Not too many drive longer distances too often. So depending where your social circle resides, location is important.
