And that is why, I believe, an establishment that grinds its' meat fresh on site can cook it more rare. The interior has not been exposed.
It doesn't even matter if some kid that's making ten bucks an hour really is, as you suggest, taking the meat grinder completely apart at least once every day and completely sterilizing every piece of the machinery.

The surface of the meat being ground up has been exposed, and carries biological contaminants including quite likely several strains of E.Coli. Once that meat is ground up, that bacteria is spread throughout the food.

And while they can put additives in which would remain pink (so you can't really judge purely on colour), beef on its own will not be pink after reaching a minimum temperature of 71 deg.

Magoo's is great. Owner when to my highschool. Apache's is another great joint in Etobicoke. Don't know the Grillway.

The Yellow Griffith Pub in the Bloor West Village reputedly has great burgers.

Also, GBC (Great Burger Co.) which has a few locations, one on Kipling north of the Queensway in Etobicoke.

Also, the Magic Spot on Bloor east of Royal York.
Yellow Griffith is not good.

Apache & Magic Spot, those are all diner style greasy spoon burgers. You gents have to up the ante ;) Gourmet burgers are a mega trend in TO these days. I'm telling you, The Works is mind blowing!! Unique combinations, crazy stuff u'd never think to try, but ohhhhhh my god!!! The deliciousness is outta control!

^^^ I posted about the Works burgers but I think it's new to TO. (I believe they came out of Ottawa)

Definitely the best Burger I've ever had in T.O. Just went for the first time to the one on Bloor West about a week ago. Was walking by and said to a friend, "What is this place?" Went in to check it out and it was amazing. Ya gotta try the "Tower of Rings"

Burger's Priest is high profile, so it would be next to impossible for them to try to sneaking by by cooking burgers to order, i.e. medium and medium rare. How do they get away with it if it is illegal?

I was at Works in Bloorwest the other day.. Hugely overrated.

Yellow Griffin makes a decent burger, but don't be a pussy.. Go with the lamb (tastier meat).

Here
I tried Five Guys again, this time at a different location at York Mills and Don Mills. Every bite produced an orgasmic sensation in my mouth, it was intense. It's probably the next best thing besides sex.
In other words, you enjoyed your CIM experience? Not that there's anything wrong with that......

Went there once and never again.

Going in, I knew it would be overpriced for the yuppie neighbourhood, which it was (some $15 burgers) but the burgers were dry, dry, dry. QUOTE]

I have to agree. Once wasenough for me. Now the Burgers Priest, this is entirely different. We have a winner...

An inspector isn't going to be able to check the "done-ness" by checking a burger after it's come out of the kitchen, and isn't going to wait around to see if the cooks are checking every meal with the proper thermometer either. There are things they look for when they come into an establishment, but there's also a lot of regulations which they can't check every place for every time they're in (which is maybe twice a year or less - especially if a place has a decent reputation for following the law).

Had a Five Guys burger today, pretty tasty and messy. Better than Hero Burger IMO.

I like No Bull Burgers on Parliament just north of Queen. The fries are really good too.
