I like jazzing it up.
Saute some onions and mushrooms, add some crab, scallops, shrimp, (alternately some fried bacon, pork sausage/chorizo, smoked ham diced,) add some extra cheddar or mozz, a good bit of cajun spice, then the panko and into the oven for 10-15. It's good for at least 2 meals.
