Tiny Dancer in Almost Famous is a good choice. I'd add Police 69 in Ocean's Eleven (it's the last scene in the movie just after Clooney's picked up from jail) and Jumpin' Jack Flash in Fear and Loathing in Las Vegas.

The opening scene of Jackass the movie where they are careening down a hill in slow motion on a giant shopping cart with the music blasting. When I watched this I knew little to nothing about jackass and was mesmerized.

The slow mo walk at the beginning of resevoir dogs to the song little green bag.

Surprised no one has mentioned the theme to Star Wars, Indiana Jones or James Bond.
