Sambal oelek it's an Indonesian chili sauce which is commonly used in Thai cooking.it's hot but not too hot with a nice amount of acidity.

I like all sort of different hot sauces except regular Tabasco. To me it's just heat and vinegar with little flavour.

Then I tried this one day and fell in love. :)



Only problem is it's hard to find.

Not a big hot sauce fan but a friend of mine used to buy this sauce called "The Devil's Asshole" (I think that's what it was called.) A little bit of in chili was pretty good.....

Unlike Tabsaco, Cholula, Franks that have vineager/pepper bases, Marie Sharp's have an onion/garlic/carrot base, then the addition of the hot peppers. It's a fantastic, spicy flavour profile that is a must have. Careful, once you have it, you'll never go back to your old crap!

I avoid vinegar based hot sauces with the pepper seeds left in. No matter how much Dairy Queen soft serve you get into you, you can't avoid gnashing your teeth the next day.

The very best hot sauces come from Korea (Sriracha), that garlic and sesame oil combination cant be beat. Here's one to look out for.

I love hot sauce on my food I have experimented with all kinds, I use it in cooking, marinades and strait on all kinds of food. I like a sauce that strikes a balance of both flavor and heat, on a scale of 1 to 10, 10 being the hottest I like about a seven. Some of my favorites arei (in no particular order) Caolula,Siracha, Barabsian yellow pepper sauce. So Id like to know, whats your favorite hot sauce:mad:

I make my own. Scotch bonnet, white vinegar, salt and garlic.

Optionals include lime juice instead of vinegar, scalded lime wedges, bitter melon chunks, daikon etc.

Never tried the oil based sauces but might one day.

Then off course ther's roasted hot peppers in oil.

I do like to crunch on raw chillies rather than a sauce with some types of foods though.

Ontario Ghost Chili hot sauce is sold at Brickworks Farmers Market, open every Saturday from 8 am - 1 pm at one of the vegetable tables. Also available there is Diablo's Fuego, which is fantastic because it is hot and also has a lot of flavour. Sold in the 'prepared foods' room by a guy who makes empanadas.

Hot sauces! Love the topic - always Frank's Red Hot as near and dear to the heart as it IS the secret to true Buffalo Wings. Like the tabsco green (don't like the red, agree it is heat not much flavor). I also like the Bajan (Barbadian) yellow pepper sauce - great on mac and cheese - srch sirach srich wtf you know what i mean is good too. But I'm glad someone went to the sambal olek (malaysian/indonesian) just great on anything. My fave though is used by an indian place in Singapore that totally makes your face melt like the last scene in Raiders of the lost arc, yet doesn't hurt your mouth and does not have, shall we say, a delayed reaction on the south side of town...i found pores on my face I did not know I had, sweat pouring out and nose running...yet super flavorful...used in some mysore curries and biryani type dishes. And one of the waiters one day took me aside (50 yr old guy, looks 35) and quietly told me with a knowing gentle elbow to the ribs...'this stuff will make you hard..." in reference to what you think I am referring to...and he was right too...but he would not tell me what it was...

El Yucateco XXXtra Hot Kutbil-ik Mayan Style Habanero Hot Sauce


Brownish-green, it's smoky/earthy with a vegetable-type flavour. Not just salt and vinegar, it's also pretty thick, not watery. Pretty hot, too (habaneros - yeah!). Use sparingly in drops. The heat really builds up and you can feel it in your stomach - you don't just feel it on your lips and mouth.

It's pretty hard to find though. Walmart often stocks it (?!?), as do a couple of Latin stores in Kensington Market. I've seen it at a couple of restaurants (La Bella Managua on Bloor) and at an Empanada place on The Queensway.

I am a big fan of the El Yucateco Habanero. It especially delicious with fish. Its not that appealing to the eye as they don't use colouring oike a lot of other hot sauces.

A couple of others I like.

Tobasco Habanero. It is much better than the regular version both in terms of heat and flavour. This is my go to everyday hot sauce. Unfortunately it is near impossible to find in Canada. Whole Foods used to carry it but don't anymore. I now but a dozen bottles when I head to the States.


Another favourite is Outerbridge Sherry Pepper Sauce. Again not really available here but I have had bottles brought back from it's native Bermuda. Really intereting flavour almost like a mix between Worcestershire Sauce and hot sauce. It is excellent in soup.
