I am interested to know where if anywhere there is a dessert, or pastry place that consistently makes the best carrot cake you have ever eaten. To answer that adequately you would have to have had enough bad carrot cake experiences to know what good or great carrot cake is. So if the carrot cake icing is made with granular sugar instead of icing sugar it is shit carrot cake, if there are no walnuts it is shit carrot cake, if there are no raisins or minced dates it is shit carrot cake, if there are no shreds of carrot visible it is shit carrot cake If the icing base is not cream cheese it is shit carrot cake if there is no cinnamon it is shit carrot cake.

These are the basics for shit carrot cake and conversely the basics for spectacular carrot cake.

Are there even better ingredients I haven't mentioned? like boiled rendered down and pureed oranges? mmmm makes a huge difference. Nutmeg? Allspice?

A friend brought carrot cake over for dessert the other day as I was hosting dinner and it was supposedly the be-all and end-all carrot cake but it was just awful, I couldn't even eat it, the granular sugar icing was probably 75% of the cake and I was thinking where the fuck is the cake?

When my kids were young and needed swimming lessons.
And dear wife was doing the home maker thing for the kids.

I would make up home made jams and jellies after home from the office with what ever fruit etc was in season and found affordably.
And the good price was for the weird shaped things, because in my case it is all getting chopped and shredded.

So I used to make a spicy carrot cake jam whenever a bag of carrots with a bunch broken in the bag turned up on the B cart at the grocery store.
Recipe is in Bernardin preserving recipe books.

I sold the jams at craft shows, and profits paid for the kids swimming lessons.
I used to make and sell about 400x 250mL jars a year.

I made a profit of about $2 a jar, of you dont count all the time I spent making it or selling it.
But when making jam the set up and clean up is almost the same whether you make 7 jars just for the family.
Or 28 jars in the course of a night and then almost the same time to clean up.

Oh the things you do when you are young and hustle to make money.

I too am a lover of carrot cake and agree with everything you mentioned except raisins. To me carrot cake is like pizza. Even bad carrot cake is carrot cake but I'd love to sample some superior offerings.

Costco usually has packages of what they call mini-carrot cakes or you could call them very large carrot cake muffins. Packages of 6. They have everything you are looking for. Rich and moist.

Raisins are poison. They totally destroy the enjoyment of butter tarts if they're in there because you have to pick them out.

Couldn't agree with you more. I absolutely hate raisins and if I decide I want to eat some thing containing them I will literally go over it with a fine tooth comb and pick out every single on. They are just so gross.
