'Amount' is used for a quantity: 'an amount of money, sand, time', etc. 'Number' is used when the quantity may be counted: 'a number of dollars, grains of sand, years', etc.

My brother bought an African Grey when he was in the merchant navy and his route took him down the coast of Africa. Somebody on shore was selling them for a couple of dollars. He brought the poor bird back to England and she became family. Always felt sad for her because they live in flocks. Not stuck in some apartment in England. Smart and sociable and affectionate. I would agree that her EQ was like a 5 year old child. Loved that bird.
