A tip is like a bonus payment? In the days when I was a low-mid ranked employee for big banks/insurance companies my target bonus was 10%...the company and my performance usually exceeded the target but I know under performers would get less than 10%. I know one year the worst performer got 0% raise and 0% bonus. Not sure why servers and delivery drivers expect big tips if they do a shit or even ordinary job. I went to the Keg the other day. The kid waiter did a good job and I gave him a 20% tip. If he ignored us all night and just started being nice when presenting the bill he would have received a lot less or perhaps nothing

I agree. If the server is polite and friendly but doesn't check on me even once, it's 15%. If she checks on me and is polite, 20%. For really great service, maybe even more.

For really bad service, no tip.

for me it has to be brutal. Like yelling at me. I’ve never met a saint, I’ve never met someone that doesn’t make mistakes, or isn’t off their game somedays. I dare say, everyone here is rarely always stellar at work. Is your check any less when you spend a total of 1hr a day checking your phone??? It’s a very rare day I leave $0.00 oh to be so perfect a saint.

Food.
Servers have nothing to do with kitchens. They don’t over cook, under cook. They don’t mess up recipes, they don’t fall behind so your meal is late. How many here get snarky with servers when your meal is tardy….and then it started….

Service.
Let’s say I take a hot chick maybe an SP out for dinner, or my wife on a rare date night.

It can be great food/poor service I’ll tip around 15%. I won’t go back. It can be mediocre food/great service. Ill tip 20% or more and I’ll be back. In short, what makes that night a success?

What do you all think is going to motivate servers. Knowing they can be off their game but still receive say $25/hr….or knowing if they are on their game that might be $30-$35 ( depends on many things like what kind of restaurant, booze, etc what they average) but any server I’ve ever spoken with usually has the average around $28/hr.

Truism…
Some establishments split tips. Amongst servers ( good ones penalized, bad ones rewarded) kitchen staff ( same thing bad ones rewarded and keep in mind in most decent restaurants chefs. Sous chefs etc make far more base) and managers/owners ( brutal practice)

and no, it shouldn’t affect the tip good servers make. They also tend to work their asses off. Not a fan of tip splitting. Can you give a good reason why a chef who makes more base, screws up a meal….but that waitress that made your night, that helped get you laid that night. Should be penalized because someone in the kitchen…..

almost forgot. When the till is short because someone screwed up, or arse hat customers dash and dine…guess where that usually come from…..yep, severs tips.

I think bad service should get a symbolically low tip at least in some cases but I've worked many jobs doing much better service than standard when both pay wad lower and tipping had not reached those industries yet. I even turned down tips because it was not ecpected. gifts on the other hand different issue.

I've been going out a lot and there's been only one waitress who i felt actually deserved a tip. I tip everyone anyways but the amount of effort put in has really gone down compared to 10+ years ago. It used to be that if you werent attractive, at least you were attentive or funny, or had some kind of good quality.

Nowadays they're just rushing, understaffed, barely make conversation, take forever to get back to your table if you want anything. I would tip 0 if I had it in me.

North America should be like Europe no tipping is required because service workers make a decent wage but don't expect them to go out of their way to serve you. Unlike in North America, they work you for tips like giving you a free cake on your birthday.

The tip pool happens based on sales not tips earned. Antwhere from 3-5% of sales. So no matter what cooks get theirs.

Depends on the person. Some people don't need external motivation for doing a good job. However, it can certainly be demotivating to that person seeing a lazy ass server getting appreciated as much as they are.

have to disagree.
Obviously not going to get into numbers. Once upon a time I worked for a firm in the financial district. Virtually everyone from the swinging dicks to the mail room. Were base + bonus (paid quarterly). The pool was a percentage of profits. Good years my bonus was 80-100% of base. Bad years maybe 10-20%. Our turn over was extremely low. When the company closed about 90% of staff had been there 15 years and more (I was 18) …There is a real cost to turnover when you have to train people. Over and over until they get up to speed…….

Also, when the financial crises of 2008 hit.While a lot of friends and colleagues at other financial firms were getting pink slips. We didn’t let a single person go. Profits were slim for a few years, but those higher up the food chain (traders., execs) willing reduced bonus amounts. So we could keep profits but not have to let anyone go.

there isn’t a better pay formula for productivity then base+bonus. Gives companies and management flexibility to navigate tough times, and reward employees during good. Aka productivity. “Greed” or simply the desire for some $$ is the strongest motivator known to man kind..that’s a proven fact. Else why do you work???

guess in the end it depends on who you work for. And your management team

In Ontario at least now the base wage is minimum wage for alcohol serving servers and normal people is the same and I don't personally agree with tip culture at all I think if they feel that minimum wage isn't enough they need to pay their servers more and charge me more I hate the awkwardness at the end of the meal.
