If I delete a message before someone has read it (doesn't have the little check marks) on WhatsApp, will the message still get delivered to them? Or am I just deleting it from my phone/screen?

youre just deleting it from your screen. I tested this. people were replying to my messages even after i deleted them so they get sent. i thought the whole point of deleting messages after u send them was to take messages back in essence the idea on whatsapp of deleting messages, but its not the case.

I haven't used whatsapp in awhile, but I believe there's a little icon (a clock I believe) when you first send, one grey check mark when it's received by whatsapp, two when it's been received by the recipient, and two blue check marks when read. So if you deleted it with the clock showing and before the first check mark, and hence it hasn't been received yet by whatsapp, you should be fine. In my experience, that's unlikely though. It's usually about a second for whatsapp to receive it, unless you're in an area of no wifi and bad reception.

WhatsApp is an instant messaging app so it kind of defeats the purpose of being able to delete a message before someone reads it.

Paranoia. Even if Facebook knew your phone number, what's going to happen?

You can recall your messages in wechat within 2 mins time frame. I used that feature quite often if I just want to show a picture to a friend but don't want them to keep them.
