I'd love to get a dashcam for the car but knowing myself, its a hassle to delete every time and i am sure i will forget one day and it'll bite me in the ass.

My thoughts exactly. Unless you're pulling up to a blinking neon sign saying that you're at a massage parlor, then you can usually leave the dash cam alone. If the wife really does want to go through the trouble of looking through dash cam footage, then she likely has a private eye following him around too.
I just unplug power/turn it off while out. It's not that difficult to wipe once in a while either, no one is ever going to go through hours of your footage
I have a Garmin. Bought it for my truck when I was still working and put it in my car when I retired. I leave it plugged in all the time. When I start my car it turns on and shuts off when I shut car off unless I cancel the shutdown. I leave it on when I go shopping.
