I understand that this dates back to the Norman conquest of England. Certain foods such as beef and pork were reserved for the Norman elite, while other foods such as chicken and fish could be eaten by commoners. The Normans spoke french so the English servants took to calling the meats served to the upper class by the french names, porc and boeuf. Meat from the other animals retained the english name for the animal.
