Lobsters were a poor mans meal until the 1850s. Lobsters were so plentiful in the oceans that after a storm the beaches would be littered with them. Poor people went down to the beach to pick up some free food. Lobsters were also fed to prisoners and servants. Some servants would not work for rich people unless there was a written agreement that lobsters would not be served to them at meals more than twice a week.
Cornelius Vanderbilt mistakenly one night ate some lobsters meant for the servants and liked it. He had it served at his parties to house guest and lobsters became popular with rich people.
