In 18th century France it was common for street vendors to have an outdoor rotisserie roasting beef, pork, and chicken. The wealthy people would be able to afford the roasted meat. Under the roasting meat would be a pan to catch the fat and drippings. The street vendors would throw chopped up potatoes into the fat to cook and would have fried potatoes to sell to the poor people. Even though other cultures had some version of fried potatoes, France was credited with French fries.
