When I accidentally touch a woman, it is always the woman who apologizes to me.
Just one example. A few years ago I got off the subway train with my bike and accidentally bumped into a young woman on the crowded platform. She apologized profusely for being in my way.

I agree some form of PTSD but instead of recognizing that, she doubled down which is where she really went wrong.
As for him recording, I don’t blame him. She is unstable and he has no idea what she is capable of.

A little off topic but yesterday I had lunch at work a pulll pork sandwich. Nothing special about it, a woman two tables away complained it was pork! I said you're right it's my lunch well later that afternoon I was called in to HR and I was told I should be more sensitive in this matter! Well I put it very direct I told HR to go puck themselves, I could understand her concerns if she was beside me remember two tables away. And then I quit walked right out the door all they followed me out saying no we can work this out no were bending over backwards for everything and everybody. All I can say is I hope the summer is good because I will enjoy it

Assuming your place of work isn't in a religious institution that forbids eating pork, I don't see the problem.
However, regardless of your own personal religion or eating habits, it would be offensive to eat pork in the dining area of a Jewish or Muslim institution's building imho.
I think he is justified in recording it because who knows what other allegations she might make against him. She sounds off kilter for sure. Did she start freaking out because he called her out for line cutting???
