I missed this thread because I was away for the first week of the year -- in Phoenix which I have discovered is the best escort city in America. But more on that later...
My favorite hotels in order are:
Intercontinental on Bloor: This hotel is beyond "escort friendly." I've stayed there so often they know me by name and by hobby! The doorman chatted up Bobbi as we waited for her driver to pick her up after our infamous 24 hour overnight. I'm also an Ambassador member so I get an automatic upgrade to either a deluxe room or junior suite when I book at the best rate on their website. Besides it's virtually next door to the greatest breakfast place in the GTA -- Over Easy! Also, you can't beat the Bloor/Yorkville neighborhood for good restaurants and bars.
King Edward (le Meridien): This hotel has some of the best public rooms in the city and is beautifully appointed. Being a member of the Le Meridien Moments frequent stay program makes upgrades to suites much easier. Great staff service and comfortable spacious rooms. I prefer the Bloor/Yorkville location to this downtown neighborhood though.
Cambridge Suites: I regularly get the best prices here of any top hotel in YYZ by using Expedia, Travelocity, or Priceline. Friendly staff, extremely escort-tolerant, and all-suite facilities. For winter trips it's also located on the Toronto underground tunnel system, so that's a plus. Also the free breakfast is excellent, although it is limited to high-carb continental fare, so I often choose to eat in their restaurant. I understand that it is located very near the Roomates incall location, though I've never needed to use them.
Grand Hotel: Another all-suites facility with inexpensive prices on the internet. The suites aren't quite as spacious as those at the Cambridge, and I don't especially like the way they are decorated. The roof-top jacuzzis are open year-round, and I recall an amazing experience with a top escort as we did the deed in one of those jacuzzis during a beautiful snowstorm -- erotic and romantic! But I simply won't stay there any longer because of the neighborhood -- filled with drunks and heroin addicts staggering around and panhandling for cash.
I find the Hilton too big and cold for my tastes, and though I've been housed at the Holiday Inn on Bloor on the Comfort Suites by organizations that have hosted me in Toronto, I've booked my own hotel because I found those places too cheap and motel-like for my tastes. Remember that I usually spend at least four nights when I come to Toronto, so one of these cheaper hotels might work great for a one-nighter for locals looking for outcalls.

A few afterthoughts
A favorite escort of mine praises the SOHO Met Hotel, so I'm putting that one on my "to do" list, and recommendations for the St. Germain and Windsor Arms are intruiging so I'll take a look at those too. Hey Max, I am also a Gold Tier Moments Member and love the King Eddy. In terms of suites, IMHO they have some of the nicest in the city. Their Royal Suites on the lower floors are huge and very spacious. Since the hotel is about a hundred years old, those rooms bring you back to the early 1900's when buildings use to have their best rooms on lower floors because there were no elevators back then. That is why those are called the Royal Suites. I believe on the 7th to 9th floors. I am a VIP there and got the info from the GM. I also stayed on their Club Level for a while, but as soon as I found out about their suites I never went back to the Club Level. Although I do frequent the Club Lounge whenever I get a chance for the free food and drinks.
Le Germain is definately recommended, but if you are a sucker for room service then stay away, becuase the food is horrid. Rooms are nice and the bathrooms are cool, but the food is just bad. Soho Met is kind of the same. Both hotels are of the boutique style. Very modern, very cold. Decor is chic and contemporary. The menu at the Soho Met is also not that great, however they do have a great restaraunt in the lobby called Senses. Le Germain also has one in the lobby called Luce, but like the room service the food isn't very good IMO.
Again my recommendation Madmax is the Windsor Arms. If you haven't already you must book there and give it a try.

PHNINE, I'll definitely consider the Windsor Arms for my next visit. I may give the SOHO Met and St. Germain a pass though. Since I usually do bookings of 3-5 hours, room service food becomes an important consideration in hotel choice.
