It's a more dignified way to avoid violence than farting. Vulcan blood is copper based, their farts are absolutely sickening.

Nimoy suggested it to the producers, because of the nature of Vulcans.
I heard it was because he was younger than the other main cast members and had a Beatles style mop top hairdo.
The producers were trying to target a young hipster audience.
