If your staying in Soho and you dont want to roam too far, and are fairly reasonable...
italian - ciprianis, awesome italian with some real new york flavor in terms of clientelle... the entertainment of people watching is only surpassed by the food... (broom and west broadway)
mexican - Dos Caminos, best mole sauce... EVER... the patio faces Houston and you could easily spend an afternoon just watching the models walk by... (houston and west broadway)
Schillers Liquor Store - great spot for a light brunch/ lunch... low key celebrity hang out with some really good simle food...

notable - but bring your CC.. not of these are cheap...
nobu tribecca (i still prefer the one on 57 street)
quality meats - steak house just south of the park
per se - in the time warner building... pricey but worth the experience...

Probably the finest Itallian food (Il Mulino, that is) in Manhattan. Bring some $$ as it is pricey, but the food is incredible. Nobu, Tao, Balthazar, Campangola on upper east side, Per Se Columbus Circle is great. Ask the doorman at your hotel for his favorite as well. Angelo's in little Italy is very good.

http://www.ilmulino.com/newyork.html close to SoHo if not actually in it.
