I never said you should hide your normal wallet because it would be impractical. A second wallet could raise supicion if it's found. You could lock the wallet in the bins, but that also might raises suspicion. To solve that issue, you could get cash just before the appointment because ATM's are everywhere. Your SO would not have any opportunity to look in your wallet before you got to the appointment.

Same idea with your third point - we could all be safe if we drove 100 km away each time, but that creates its own problems.
You don't have to drive 100km each time. Drive someplace fairly close to the incall like a mall, office building, etc. then walk the rest of the way. Or take an Uber, or transit the whole way so there's no dash cam footage at all. I'm sure you could come up with a story for why you're taking transit somewhere like a meeting with a colleague, etc.

So IF ---- IF you hobby locally, wearing a hoodie is not making you stand out unless people never wear hoodies where you live.
If you're wearing an extra large hoodie and a toque in the middle of summer it might make you stand out. The reality is that Toronto is a large city, with tons of people in it and lots of places to go. The chance of running into someone you know is quite slim. If you happen on someone you know, there's lots of stories you can dream up.

If you're SO is reviewing dash cam footage, looking in your wallet, etc then you're already in trouble.
