To all Americans:

If you want to learn what Canadian cuisine reserve a table at Pied du Cochon (The Pig's Foot) in Montreal, run by Canada's top chef Martin Picard. I've dined there and can't wait to go back.
I had his Foie gras poutine and duck in a can. Inetersting but rather contrived. Nowhere near a representation of Canada.

Canadian cuisine is a melting pot of cultures that call this country home.
I would rather subscribe to this version.

The only Pho places I've been to were the truly authentic ones where I was the only white person there, and where they only spoke Vietnamese and not English. For a large heaping bowl it only costed $5-$6 and there was a ton of noodles, rare beef and brisket, as well as enough broth to fill a small tub. It's very salty, and I can taste the MSG in it, but I suppose it makes it more authentic since that's likely what I'd find in the streets of Hanoi. I'm very adventurous when it comes to sampling ethnic food, and I don't want a white version of the food like I'd get if I wanted to try Chinese food and ate at Mandarin, that's not Chinese food, that's not what they eat in China.

The question is, where can I get good Pho?
MSG is universal. The only places you can get food without MSG is at home, high end restaurants where the flavoring comes from roasted bones stock or if you know the owner and ask for dishes without.
