I've been coming to Toronto for 15 years on a yearly basis, but just had a 2 year COVID-hiatus. Will be back in June for 5 days (and a lot of money to spend ;-)) so I will be making TDL's like crazy again with this forum :). Anyways, I'll be a St Germain at Mercer street (as always), but decided not to book breakfast there and go out for it.

Anyone have some advice on good breakfast places downtown / entertainment district?

The Sunset Grill is pretty good. NE corner of the CBC building on Wellington W, right next to the Ritz Carlton. An easy walk from your hotel.
If you want something close, quick and simple, the French Made cafe just at the end of Mercer on the opposite side of BJ way has nice coffee and pastries.

Have a fun trip :)

Fran's at Yonge and College. Old school diner. Large portions. Quick Subway ride.
