When I was growing up in rural Quebec we always had an armed escort (you know what I mean) plus one or two dogs when we went camping. The dogs were an early warning system.

All animals are flesh and bone. A slug to the brain ends them all.
Have you done this? A shotgun slug disperses with distance, the bear would have to get close for your assumption to work. A head shot will not slow it down, you'll wound it and it will kill you once upon you.

Bears are important to the environment, they disperse seeds from the plants and berries they eat and they prevent disease by taking out sick wildlife and scavenging potentially disease ridden carcasses.

Notice these hunters aren't using shotguns.

You have to shoot a bear through the heart to stop its charge. I've retired from hunting since the 00's, a license for hunting moose has gotten more expensive over time. I used to carry a Marlin .450, if a bear showed up we'd fire into the air and it would run away. The only way it will charge you is exposed flesh with some sort of injury. It doesn't take much, as little as a scratch, bears have a keen sense for the smell of blood. Any women hiking with us would need to double up on their feminine protection.
