Start off with a HOT BBQ . Light it up and let the BBQ warm up. Put the steaks on and let them sear. Then turn down the the falme.

Do you guys cook the steaks with the lid open or closed, I always wondered which method is better?

First you must boil the ribs in the house for about 10 min before you BBQ them. Your ribs will be like butter. Then you can cauce them as you wish. The final coating leave on and don't turn them over.

Also there is some fantasic beef recipes all over the net.

I smoke them for 3 to 5 hours Bring them to 160 degrees and get then in to a sauce bath right a way. Soak them in the sauce over night in the fridge

alll suggestions seem good..BUT...

In addition to the wine, garlic, I squeeze lemon juice over the steaks. NEVER SALT steaks. Think about it..salt absorbs liquids, It'll draw your steaks dry of all their juices

I season with a small amount of salt before cooking without any trouble.

I make a rub with cayenne, seasoned salt and white pepper. Rub it in, let stand at room temp for 4 hours minimum.

I have one of those big Stainless steel grills. I heat it up as high as it will go on one side, then sear each side for one minute, nice grill marks.

Move it to the other side, grill temp is at about 350 or so, and then 3 more minutes each side. Makes them medium rare.

If you don't have much time, rub any kind of oil all over the steak - 10 minutes before cooking. The sauce just burns off anyway, so put it on just before you take it off the grill. If you do have the time, put the steak in a plastic bag with italian salad dressing, soy sauce and chopped garlic. It really only takes about 4 hours for the garlic flavour to seep into the meat. Like someone else said earlier, ribsteaks or high quality meat make all the difference. Regular steaks in the cellophane at the supermarket are not the best. Invest and go to Bruno's or a butcher shop and pick one out an aged one with marbled fat. Don't overcook it and just turn it once. The steak is still cooking itself after you take it off the grill, so take that into consideration if you don't want it well done.
