My condo currently has a no-visitor policy. I suspect many other buildings have it too

This "policy" is of no effect. Condominium Corporations are not governed by "policy". They are governed by the Declaration, the By-Laws and finally the Rules.
If the Corporation did take the correct steps to pass a "Rule" (Notice, vote of Directors, notice again and then 30 days to object) a blanket Rule prohibiting visitors would be considered "unreasonable" and would not be upheld. They certainly would have received this advice from the Corporation's lawyer.
Okay, but the 24hr concierge can refuse access into the building, and where I live you need a FOB key to operate the elevator.
So how are you gonna get in??
I've never been "hassled"- I'm a rather large individual with a pissed off face(I've been told), but at the ASB building on the Huronontario corner one of the guards used to give me a wink and a smile on my way out. Oh, yeah, while leaving an independent incall downtown, I walked with the SPs neighbor, a middle age lady and her dog(I don't know how old it was), and she told me straight out that this kind of activity shouldn't be allowed in a nice family building. Sensing an opportunity I asked if she wanted to grab a coffee on the corner- not with the likes of you- she answered with conviction. And there you have it-I said- that kind of unkind attitude forces wonderful men like myself into the swamp of prostitution. The look on her face was priceless. The dog liked me, though.

I think your Board may be well intentioned to discourage visitors for obvious reasons. However, they have NO right to prohibit you from having visitors to your home. They are misguided in not allowing a properly introduced and verified guest to come up to your home in the elevator... alone. Having you have to go down and accompany them back up takes up valuable limited elevator capacity.
Well before COVID, I was the key to pushing my condo to enable the Elevator FOB and floor restriction by FOB feature in the elevator. There were door to door canvassers/peddlars that would slink in along with a resident. There is NO reason that anyone who doesn't live on my floor should be able to walk my hallway... checking for unlocked doors.
Now under COVID, residents are required to meet their food deliveries in the lobby or the food can be left there. Our 24 hour concierge keeps an eye on the food!
Mine too. I've taken note of the locations of the notices around the building, for when the next toilet paper shortage hits.
What I always do is tell the agency to meet the girl at the corner of my street, I then sneak out my building through a fire exit, and then we walk up together through the lobby making it look like we're a couple
What about hotels?
Are they restricting access, asking all guest to contract trace? With business being slow, I can’t imagine the traffic level is the same.

Generally the concierge knows if there are incalls in their buildings and some get their palms greased to allow in selected incoming traffic. Hassles like“ a no visitor” policy or other scrutiny are boner killers and are bad for business. With the lockdown, tensions are high, people are home and watching much more than before so that operating a high or even low volume incall in a condo would be much more difficult than before.

HAHAHA, I was thinking the same thing when I read his post and you beat me to the reply.
What I am more worried about is camera in the condo. If you are being filmed or just if they have security. I remember back a few yrs ago when I visited this Asian agency one of their prized girls was being stalked so it looks like they put cameras in the condo.
