I remember I would see a few threads talking how clients and escorts would have a social gathering at a restaurant or something. I was wondering what the social interactions were like. Did everyone act like colleagues? Were conversations explicit? Did booked sessions happen spontaneously after the fact?

Really? The ones in Mtl always had a dozen or so indies and a bunch of agency girls.
People would mostly just be shooting the shit.

I've had informal meets with a few blokes met from here and a few ladies, maybe pop over to an earls or Kelseys and have a drink and some tucker and chat. We talked a lot about the industry, as there are not many people one can chat with about this. The ladies came on their own volition, but of course we lads shouted their drinks/food. It was a lot of fun.
The ladies used the event to do a bit of marketing. It was good to be able to put a face to their handle.
