Roo is gamey meat. Hard to cook because no fat. I had to use butter for the sausages or burgers when I had down there. Aussies like it in meat pies which is easier to digest and tastier with the mix. However, as far as red meats are bad for cholesterol levels, roo is 50x worse than beef.
