Need Help With a Chili Recipe I saw online. Hoping Someone Can Answer a Quick Question

Saw this chili recipe on online, and was hoping someone could give me advice. At the very beginning, he puts cut bacon into the pot but doesn't appear to drain the fat. Is he then cooking cooking the vegetables in the grease from the bacon? Whenever I've fried vegetables in a pot I have put olive oil in first.

Bacon may add a dimension to the flavour. Nothing wrong with that. It depends on one’s preferences and tastes. We use olive oil and the fat from ground beef that we use in our preparation.

but it he doesn't appear to use olive oil, so is he simply frying the vegetables in that grease??

If there is enough grease from the bacon fat to cook that volume of veggies, then yes. If not, you may add a small amount of oil in addition to the bacon grease. Using the bacon grease as mentioned above does allow for another dimension of flavor being added to the veggies

Bacon fat will rise to the top and the chili look greasy on top get a large metal spoon and some ice cubes and just rubbed the bottom of the spoon over the chili and it should solidify the access grease It's stick to the spoon, to so no need to strain it... Instead of bacon Using panchata it has more of a richer flavor

Olde fashioned chili would sear the meat in lard (chunks only, no ground beef or beans, according to a friend down in texas)...so...maybe the bacon grease is not so far off? Scrape up the fond from it if you do so to enhance the flavour...good luck!

Drain some of the oil if you have both the bacon and the olive oil. Just keep in mind that the cumin may turn bitter if it cooks a lot, some people add it towards the end. Or add some sugar.

Just like camping with a cast iron skillet. Cook bacon first, drain some fat off.
Then cook diced onions and green peppers til onions are transparent
Then add the beaten eggs and a bit of milk made from powder to make a great wilderness omelette.

It does not always look beautiful if cooked over coals, so we just call it 'egg thing', dig in and enjoy the taste.

Poured off fat into paper towels or dried leaves works great to get the fire going that night.

Burn this the same night or critters will drag it all over the place as they lick up the fats, if you instead try to keep it for the next morning.
Don't ask how I found that part out. Made a hell of a mess of the camp site, and some of our life jackets

Sure, you just have to be really careful of your temp since bacon grease can begin to smoke quite easily, which adversely effects the flavor quite quickly. A little cooking spray in the pan first will help...

Frying meat or veggies in bacon grease is the way they did it pre 20th. century when things were hard and/or ingredients were hard to come by. It ads flavor to the dish and cuts down wastage. Frying with olive oil ( or corn, peanut oil ) is much better for your health. Many southern black people fry with bacon grease because this is part of their heritage. The recipes have come down from the older generations. There is a high rate of heart attacks in American black people from consuming animal fats.

Interesting, because I was wondering if I try to make it without the bacon. I guess I can just put olive oil in the pot and do everything else he showed.

You can replace the bacon with lean smoked ham and use an olive or vegetable oil. Much more healthier this way.

I put an expresso shot in my chili. Can't recall where I saw that as I cook my chili without any recipe for a good 10 years.

Also I always put lots of carrots. Chopped very small.

I'm trying to stay away from variations as I want to follow the recipe and see how it turns out. I just wasn't clear on how he was frying the vegetables without olive oil.

Very good points by all, not much to add. If you are using a non stick pot to make your chilli, ALWAYS use a wooden or plastic spoon to stir with. Never use metal utensils, chipped teflon is highly carcinogenic.

Lard and pork fat/bacon is only OK to use if you work manually for 8 hours a day. Otherwise, for your health use vegetable oil sparingly.

I can my own tomatoes without preservatives, using only a spoonful of vinegar or lemon juice per glass.
