We've been told to limit the amount of saturated fat, sugar and sodium that we eat, but we've received conflicting messages on the harm of these substances.

In the 70's, saturated fat was considered public enemy number one. The food industry responded with a host of fat free products. In order to make these products palatable, they substituted saturated fat with sugar, and tons of it. From the 70's onwards, there was a huge spike in metabolic diseases and death due to heart attack, stroke, cancer, diabetes etc. In hindsight, we now know why. It turns out that sugar is the major cause of all disease, not saturated fat.

Saturated fat has been relieved of its evil label, and is now not believed to play any role in the development of heart disease or strokes. Similarly, sodium was until very recently one of the demonized white powders that was thought to contribute to high blood pressure, resulting in heart attacks and stroke. Now it's believed that sugar is actually the white powder that contributes to high blood pressure. The confusion arose due to the fact that many of the sodium laden processed foods that we eat are laced with sugar as well.

When you consume a big mac meal, it now seems evident that the worst part of the meal is the sugary coke, instead of the saturated fat filled big mac. If you must eat a big mac, skip the coke, and have water instead.

Not just the coke.

The fries are loaded with salt, fat and potatoes which are really high on the glycemic index..... which is bad for anyone who is weightwatching or pre diabetic.

That is true, skip the fries and coke, and substitute them with an apple, or carrots, and water.

My cardiologist told me long ago to make sure I got enough salt/sodium. If anything to err on the plus side. No such thing as one size fits all. Nor one food.

once in a while if i have a big mac craving i just order a double cheeseburger and ask them to make it like a mac.

also cuts down on the extra slice of white bread

Don't be silly. In fact it's because they have a few good clues that they talk; if they kept stumm, we'd miss good bets and encounter avoidable dangers. It's up to each of us to evaluate what we're being told and decide for ourselves how well their clues align waht we already have, and what to do if they don't. Most often that's the simple lesson your Mommy taught, "Avoid extremes, especially if it's just because everyone else is picking them".

If we waited until all the clues had been verified and registered as proven facts, we'd still be jabbering wordlessly in trees, somewhere in Africa. The clueless wonders you're talking about aren't scientists, they're purveyors of "alternate-facts".

Your catchphrase applies to industrial loaves of wonder-ful factory bread that needs nutritional elements added back into the flour during production. The classes who ate pre-industrial white bread had the longest life-spans — much like ours — of their times. White bread made with good flour is a nutritional as anyone would want.

so are you sayung white bread is good for you?

in moderation i am sure it is fine. i thought it was high on the glyemic index. which is not good for peoople watching weight or blood sugar levels.

What I don't understand is this - why not just limit/avoid ALL packaged and fast food and focus on "real" food - meat, eggs, fruit, vegetables, whole grains. Why guess what the poison of the week is this week and what isn't?

Because most of the foods you just listed are processed, altered or sprayed with pesticides to some extent.

Meat is irradiated.
Grains have modified gluten content.
Almost all vegetables and fruits have been sprayed with pesticides.
Cows, pigs, chickens and lamb are given hormones to make them bigger and increase profits.

Etc....etc

And yet humans being are on average living longer and longer, so it cant be all that bad
