The Quebecois French language has a many peculiarities.

French toast is called "pain perdu" in France, which translates back as "lost bread".

what the fuck.
French toast is made from stale bread, it is better than using fresh bread. That may where the lost bread descriptor comes from. French bread originated in the US and was first made by a guy named French before it was known in Quebec then made its way to France
