At the turn of the century, Chicago had a lot of Catholics. Many went to the park to enjoy themselves on Sunday rather than to go to church. The Catholic church put pressure on the city hall to make a law forbidding the sale of soft drinks on Sunday, but there was no law forbidding the sale of ice cream on Sunday. To increase their sales, vendors added candied fruit and syrups to the ice cream and called them Ice cream Sundaes.
