What exactly is pho?
Beef noodle soup.

They serve the soup boiling hot and give you thin slices of beef , which you toss into the soup. The hot soup cooks the raw beef. Once it cools off a bit the beef is cooked and it's delicious.

I don't know of any Vietnamese fancy restaurants , I go to mostly noodlehouses. A decent one is Pho Asia on Wilson and Keele. very reasonable and good.

My concern like Tease said above is the Msg content and sodium as I suspect they use extracts that are packed with sodium or a mixture .

I don't think there's such a thing as fancy Vietnamese. Usually, they end up to be overpriced versions of the same thing (or corny attempts to fall back to French Imperialist roots and meld Viet with French foods).

Good pho isn't hard to spot. The common offenders are bland broth and brown, wilted sprouts or lemongrass and basil.

Rookies don't have to go for the raw beef right away. They can start with the cooked varieties first, and ease into the pho dac biet with the tripe and tendons. #101, please! :p

I liked Pho 88 (the one on Spadina south of Dundas, not the one in North York). They used to offer fresh or dry noodles.
