Interesting social experiment.

Americans girl asks locals to tell her what to eat. Some of it was standard but she didn't know she was eating horse milk cheese.

Trippa, yes please. Ceiling Cat prefers beef rectum.

If I wanted a snack, I would stop at a stall for a slice or more appropriately a spontino. It's served like a flatbread sanguichi, it's all good - except near the train station, have the roti instead.

Sadly the zany poster shop across the Tiber from the Vatican is no longer there. I saw a poster of Pope John Paul in a pensive pose with his finger on his chin, the caption above read, "I'd kill for a good shit".

He's eating fresh anchovy.

In my experience it is literally impossible to get a poor meal in Italy. Even at tourist traps, the food is good, with a carafe of decent house wine for Euro 7.

I am going on my yearly spring trip to Rome in April.

Even the food at the Autogrills is great!
The best Autogrill food I got was on the E35 between Bologna and Florence. Even some Five Star Restaurants cant match it for quality and freshness. And the scenery is gorgeous as you pass through olive groves and protected forests in the Northern Apennines.

What was that massive grilling of pork back ribs ?

I have eaten and cooked in Italy for years.

I am a good cook and guests say my ribs are my best dish.

I understand a wood fire, but what was that liquid that they were mechanically spraying on the ribs ?
Any other secrets that would improve my offering ?

As for eating in Italy, the food is consistently excellent or better almost every where.

My rules are:
1. do not eat within 100 metres of a train station
2. avoid any restaurant that has been taken over by Chinese immigrants. Yah they known noodles too, but they are not Italian.

That Autogrill is on the E35 on the Romagna side of the border with Tuscany. Most of the meat they grill is wild boar which is delicious! They dampen the grill with spring water to moisten the meat and keep the flames in check.

This is what you should eat if you're near the Terme di Roma - keep your wallet in your front pocket while leaving the station.

Most tourists visit The Colosseum, yet skip seeing Michelangelo's ultimate masterpiece. They are close to each other, just make a left from the Terme di Tito, the street will wind around until you get to the Piazza of San Pietro in Vincoli. The church is heavily protected, don't let the Carabinier scare you. Once inside the church you'll see the Tomb of Pope Julius II with the epic statue of Moses as the centerpiece.
