Post what you're making here for this splendid holiday! Here is what I am making:

- Roasted herb honey glazed duck
- 6 cheese and walnut collared greens stuff chicken
- Butter and roaster garlic red skin smashed potatoes
- red wine infused cranberry sauce
- truffle and bison rosemary stuffing with dried apricot and cranberry
- roasted red pepper babaganoush

I also make sure that my thanksgiving dinners are well stocked with both types of wine, malty or hoppy intensified beers along with a nice selection of liquor. Happy Thanksgiving terbies!

I thought I had superb chef's skills, but am lost your in your trailing dust.

But, what, no turkey??

And do you cook alone (as I like to do) or do you have help?

And how long does it take you? That looks like more than a full day if you are alone.

Everyone has their own style :) Of course this is not done alone...but I believe with the right preparation one could do this independently. With the right prep it takes up most of the day.

Thats lot of work!

We we like to make it a family event. Everyone pitches in, even the kids making brownie mix for dessert. Makes the day fun and all inclusive.

Show off :)

We did Thanksgiving yesterday traditional turkey, ham, stuffing, mashed potatoes, carrots, green beans, pumpkin and apple pie with whipped cream. Good enough for me.

I'm roasting the bird as I type.

Since the dark meat takes longer to cook than the white I smear sage butter underneath the skin of the bird. Instead of basting I pour 1/3 of a bottle of white wine into the cavity, at intervals, this infuses the white meat with a rich wine flavour and the steam keeps the meat moist. Never cook the stuffing within the bird it absorbs all the moisture from the breast. I roast it on a bed of mirepoix.

Happy Thanksgiving.

WOW!!! That menu is amazing!!

I just made turkey, stuffing, mashed potatoes, orange glazed carrots, gravy, squash, and homemade pumpkin pie and whipped cream. I did find out a trick to quickly cook a turkey though. Not all is lost. ;)

I guess I was a failure, 15 lb turkey cooked beer can style with a half can of Guinness and kosher salt to baste the insides and butter, home made paprika, and Herb de Provence on the outside. Mash potatoes a la Anthony Bourdain, and grilled veggies.

I am late, but here is what we had on Sunday.

18lb turkey, roasted.
Dressing(or stuffing if you prefer) - one whole loaf of bread(must be stale for whatever reason), onion diced, couple stalks of celery diced and sage spice.
Gravy.
Potatoes, boiled, mashed. Add milk or cream and butter.
Cranberry sauce, home made.
Some kind of prepared green beans, had cilantro in it.

Home made pumpkin pie with home made whip cream(whole cream, whipped by blender, little bit of sugar added).

Quite simple, but I can hardly wait for this time of season every year.
Turkey, gravy and potatoes will be repeated at Christmas.
Other sides and desserts will vary.

Wife's younger children always start calling about the start of Oct(Make sure to get there invite to dinner).
Dog and cats love these holidays also. Once the roasting turkey starts smelling so good the dog will no longer eat his food and just wait for dinner.
I think he eats better then some small countries.
