I'm not sure about no one like Swiss cheese. Ever tried melted raclette from Switzerland? Delicious.

Not sure I want to be categorized . I'll pick Manchego.

They don't seem to have an option for Blu 61 - an Italian cows milk soft, bold blue cheese, aged in Raboso Passito wine and red cranberries. Delicious....

Esrom cheese on dense rye bread, it smells like the toe jam of a virgin 17 year old farm girl.

The only cheese I like is soft cheddar. Toast a piece of white bread , grate soft cheddar on it it sprinkle with chopped pimentos then place another piece of lightly toasted bread top. Microwave for 20-30 seconds.

Ya wanna empty a room fast, throw some sharp provolone in a microwave. It's either run or cry.

I like cooking with sweet gorgonzola, although not recommended for burgers. It gets too runy with most of it ending on your plate when you bite in. A Danish Blu or is Rochefort is perfect. Ripe Gorgonzola can best be appreciated with fruit.

When I make pasta, I prefer Pecorino to Parmesan - that's what I grew up with. Sardi if I can find it, usually Romano. Crotonese is also good but very sharp.

Le Migneron de Charlevoix is a nice nice artisanal cheese from Quebec that I had once in the Empress Lounge at Jean Lesage Airport in Quebec city. It is hard to find this cheese in Toronto at present.
