Man, there's nothing like a turkey dinner. I love to cook myself and I do everything from scratch (the stuffing, gravy, etc.) The reward is an amazing dinner.

I freeze the carcus and the bones from the previous turkey. This is used when boiling the potatoes for the stuffing. For the gravy, I boil the neck and the giblets for the base.

What are your secrets?

I slice between the top layer of the skin and the thicker fatty layer, and stuff pats of butter and cloves of garlic into the slits in the skin.

I know this is pretty ghetto, but I can't stand real stuffing - I only like StoveTop Stuffing.

pblues,
Try roasting the neck & giblets with a little chicken stock, salt & pepper in the oven. Makes a tastier & richer gravy.
Nearly,
I do that also, but I turn it over 3/4 of the way through, cuz I like all the skin, breast included, to be golden brown.

With or without the lid? I do mine without the lid with constant basting.

Prior to cooking prick turkey all over and in the holes place some butter and garlic. Then put rashers of bacon over the whole breast and pour two bottles of beer over the whole bird. Preheat oven to 400 and roast at that temperature for the first half an hour. Reduce heat to 350 and baste regularly. If you want a REALLY different and very tasty stuffing then get a jar of Newfoundland Mount Scio Savoury. It has a very distinctive taste and your guests will rave about it for years to come. Failing that, if you don't want to cook then come to the Toolbox for full turkey dinner, with pumpkin pie dessert and coffee for $10:00 starting at 6:00 P.M. on Sunday. The Toolbox is located at the corner of Morse and Eastern Avenue.

Turkey at Toolbox sounds very appealing. I think I'll attend. :)

May I bring my girlfriend and our lover?

Wow, you guys are making me lonely and hungry. Thanksgiving dinner for two is much smaller scale. I'll be cooking an already stuffed turkey breast and using canned gravy. Otherwise we end up with more food than we can fit in our small apartment freezer. I did bake two pies today though. Don't need two pies, but the kid wanted apple and I wanted cherry.

You must have an awfully big oven. However, while you're in there roasting, I suppose you have time to tug one off and make Elmo's special sauce.
