I understand that you can defer RRSP deductions. For example, I contributed a chunk of money into my RRSP for 2012. But I don't have to claim all the deduction for 2012, I can spread it out over future years. Is there any special way to report this when I file my taxes (that I plan on spreading it out)? Or do I simply claim the amount I want since CRA already knows my RRSP contribution (since the bank informs them) and my unused deduction amount is on my Notice of Assessment?

There's a schedule that you can fill out that indicates what you want to claim for the year... but i'm no accountant... you may want o consult one... (Just a disclaimer)
