I assume you're talking about male pornstars. It must be their genes (but I'm sure some also use drugs).
It could be any number/combination of the following. (all guesses)
1) Natural ability/practice
Some people just take a long time to reach orgasm, for some people can consider this a problem. I would also imagine given their proffession , they get so much practice doing this then I suspect they essentially train themselves to do this.
2) Medication (viagra and so forth)
Im sure there are those who use viagra, or other medications, or other substances too help.
3) Clever Editing
If you film the same scene with too different camera's, then edit both camera's film together, you can make what is in reality a 30 second scene seem like a minute. Sometimes they even repeat a scene over.

If you've ever seen the Behind the Scenes clips, there is alot of starting and stopping so a 15 minute clip can take a couple of hours to shoot. That cool down period helps. But, while I don't know for sure, I think many use Viagara as well. All the guys now have full hard-ons before their dicks come out of their pants. It's not like the 70-90s when the woman needed to start blowing a soft dick to get it hard.
It's a couple things...
First, the scenes are not continuous, despite what you might see in the finished product. A scene actually takes 1-2+ hours to shoot and there are breaks in between. So on one hand that's even more impressive but on the other they get breaks to jack off and get hard again.

That's why pornstars usually work with the same guys over and over again, cuz they have proven themselves capable. No chick wants to sit waiting for a guy to get it up or have to deal with limp dick on camera.

It takes a lot of self control. First you'd have to feel comfortable and stay focused with other people around (camera man, etc), then have the ability to control yourself during. Then also remember it's not shot in one time. There are usually four/five segments...some may or may not use drugs. I certainly don't.
I saw an interview with Dennis Hopper talking about a scene in Easy Rider where he rode down the highway on his chopper, he said that the 4 minute scene took 20 takes and all afternoon to shoot. I will bet you that 4 minute hump took all afternoon to shoot and 20 takes too.
I've been on a normal film set (non-porn) before, and the camera set ups and take downs take an eternity, so like a few others already suggested (and as seen on a few making of porn behind the scene things) a lot of these scenes will be shot over the course of hours.
That's not to say some guys out there don't wind up lasting a long time as there are some gonzo or POV style porns that run continuous and uninterupted, so they are out there. My guess, when its your job to fuck day after day you probably just get relatively good at keeping your cool and probably a little desensatized to it as well. Maybe because some of those porn girls don't have a lot of tread on their tires left you aren't getting the same motion or grip needed to get you off either?
A few documentaries I've seen on the world of porn have also indicated that many of these guys get a little help from the pharmaceutical-fairy too.
