Most restaurants use MSG, Western included. Apparently it is only the chemically produced MSG that is bad for you. The naturally occurring stuff, such as in Paremesan cheese, is apparently not bad. You can metabolize the naturall produced MSG but not the artificial.

There are alot of threads on this subject on chowhound, one of the more interesting replies,

Monosodium Glutamate is used as an added ingredient in all sorts of savory packaged dry goods, including chips (Nacho Cheese and Cool Ranch Doritoes, Sour Cream and Onion Lay's and Ruffles, and the aforementioned Cheetos), rice cracker snack mix, wasabi peas, Rice-a-Roni, Hamburger Helper, Lawry's seasoning packets (tacos, burritoes, enchiladas), dry soup and dip mixes, etc. It is also found in other packaged foods like Ranch Salad Dressing, French Onion Dip, canned soup (Campbell's Cream of Chicken, Beef Stock, etc), cheese flavored and other crackers, processed cheese products, etc.

I didn't realize it was so prevalent.
 
MSG was orignally used as a tenderizer. It gives you an artificially full feeling. Used by burger joints and chinese buffets everywhere. Is also a preservative I believe.

Some people can have reactions to it that simulate drunkeness, that's why the MSG signs.

The headache msg thing has been disproven, it's an urban myth, but a lot of people still believe it, so the restaurants have to put up the signs. Evidence is anecdotal only.

hey, it's got sodium in it so it's not so good for you, but it's not the evil doctor's poison either.
