Why do so many chefs teach us to heat olive oil in the pan yes it tastes great until my University friend drops the bomb on me that its really bad for you heated.

Isn't there the talk about the smoke point and all that jazz?
I don't come from an olive oil family but pour it on my meals for health purposes.

switch to Canola oil for cooking it has a very high smoking point.

For regular cooking i switched to avocado oil. But do use a lot of olive oil for many recipes.

I was thinking of buying avocodo oil again. But then it seems the fraud is worse than olive oil. Maybe best to pay up?

The study, set to appear in the October 2023 issue of Food Control, revealed that nearly 70% of private label avocado oils tested were mixed with other oils or rancid. Of the 36 oils evaluated, only 31% of the samples tested pure and 36% met quality standards.

Not true, its safe if heated. Its stable. I wouldn't use it to deep fry, but for regular usage its ok.

I used to use grapeseed oil because it had a "high flashpoint" or whatever, making it safe to cook at high temperatures. Later there was an expose of it that claimed it was toxic to use any oil that was a seed derivative. I give up.

Partially true Vinson, Extra Virgin Olive Oil is not meant to be heated. It's a condiment used to add flavour to food.

If you want to cook with olive oil, always use Classic. It's great for sauteing, just don't deep fry with it.

Keep coconut Oil for shampoo or body lotion, not for food. It's an unproven myth that coconut oil is healthy.

For cooking, my choices are avocado oil or regular olive oil. As Von said, keep extra virgin olive oil for salad dressing and/or drizzle it on pasta, fish, steak, or any dish as a condiment.

That said, I am a big fan of butter :) I use butter like a Mediterranean would use olive oil. That means I exaggerate on it 😷

I don't use EVOO for cooking, but since OP mentioned olive oil. But some people use EVOO at low temperature for cooking.
