I have alot of friends and family in North Carolina. Its a beautiful area in the spring, lots of top courses. Pinehurst is a bit isolated, but you can find a half dozen very good (if not professional) courses around the Raleigh-Durham-Chapel Hill-Apex-Cary areas.
For the adult aspect, hit Craigslist. It's well populated with independents, you can get a feel for who is reputable and who is not, and set things up well in advance. Avoid agencies, although I do think there is 1-2 that are reputable in that area.
