When I have inquired, the girl will make her own bookings for flights and accommodation. She will need to be flying under her real name and ID so you won’t be getting that info to make the bookings. She would provide the receipts (redacted of personal information) for you to reimburse her. Expect her to want this via e-trans before the trip so she isn’t out of pocket if you cancel or are a flake (not a personal insult, just a sad possibility for her) she’s not out of pocket for the airfare.
If the girl you’re hoping to see is experienced at FMTY she will answer any and all of your questions if you’re a gentleman and communicate well. FYI if you have seen this girl before you’ll have a much better chance of her accepting the invitation. Many SP’s are hesitant to get into these kinds of arrangements with new clients, but YMMV of course.

You can never trust any girl fully. Never do a FMTY with a girl you have never seen before in person is a good safety measure. Most girls ask for deposits nowadays. A lot of them are scammers and a lot are genuine. There is really know way to tell if you have never met them before. Best thing to do is read up some reviews on them before booking.
The only way anyone should ever consider a FMTY is with a girl you've met before, or at the very least a massively good history and reputation as a quality SP.
Considering it with a random girl from Instagram? No matter how much you’ve chatted with her you’re just asking for trouble my friend. You might as well just send some cash in an envelope to Mr. Vladimir c/o the nearest Russian troll farm.
FMTY”s are for experienced pooners with high standards and deep pockets. Lots of high end SP’s offer them and have positive reviews across the boards. Best to start there for any chance of success.

If you can travel to where she is, this will reduce your damage. If she ghosts you, turn it into a vacation and see others within the vicinity.
Don’t do a FMTY with someone you’ve never met. Travel to them instead.
BTW knew a bloke who was talked into by a lovely lady but after one bought of sex she kinda took off to the local pub and didn't deliver as he hoped for sure.

And independently she's a real pro with a great reputation.
Also, know that you can't expected 24 hours of sex.
Thus have a game plan of activities, when you'll eat, when you'll sleep, and when she'll have a bit of down time so she's always psychologically fresh too.

This remind me of a guy that had a fantasy of fishing in Scotland, there are so many fish in Canada. Why would you want to fish in Scotland.
The last line is what needs to be discussed and agreed upon (signed contract??) before moving forward. Partial payment is likely required before hand with the rest upon arrival. But that part is where I'd make the following stipulation: show the remaining money to be paid for the rest of the time together (so she knows you have the required cash still to be paid) but paid only just before the end of the agreed upon time. That to me safeguards against a potential "dine and dash scenario" as described above.
