I'm a traditionalist when it comes to cheese burgers - two slices on top. My preferred cheeses - applewood smoked cheddar or jalapeno havarti.
I'm so trying this one. If I'm not mistaken mascarpone is the basis of the filling in a canoli correct?

Ricotta cheese w confectioner sugar and a touch of vanilla is usually the base as per nonna's recipe (then add chocolate chips, not of that candied fruit bullshit). Some will blend in a bit of marscapone, some even more (like half), some blend in whole milk or half n half w the ricotta.
