Double bread and add some spices to the flour, garlic and onion powders. It's the sauce you put on after they are cooked. The classic, Frank's Redhot in melted butter for a dipping sauce or tossed onto.

Double breading is a must! Also, soak the wings in buttermilk for (up to overnight) before the first breading. After the first breading, let the wings sit for at least 15-30 minutes. Dip in the buttermilk a second time and then re-bread. Let them sit another 15-30 minutes before frying. I agree with dirk that it's really the sauce that makes the wings. The melted butter added to Frank's works well. I think that Frank's also has a chili-lime sauce that is good too. I put that shit on everything!

funny how i do the same...only i dip it in frank's and refry...no sauce afterwards...

I know it's lame but i use shake and bake extra crispy and just bake them in the oven. Less calories than deep fryed like most are.

Nothing wrong with trying to make them a little healthier. You can always grill them too. And, I did not mention it but, the double breading can be done with skinless wings if you want to avoid the skin. I don't eat them all that often but, when I do, I go all in!
