I was told with a PDF editor you're somewhat limited, so I'm looking for good viable alternatives.

Unless you mean image manipulation, to edit you'd need to use optical character recognition (OCR). Assuming an OCR program gives you the correct text and you're not trying to do anything fancy like tables, editing shouldn't be a problem. The two OCR programs I use are Readiris and ABBYY FineReader. I'm not familiar with any PDF editors, but if you have trouble, just use something else.

Hum I use an HP Scanner and the software it came with you can select Text and then edit it in word or note pad
