The fishing industry was collapsing and the Cod Wars were starting. I'm guessing people turned to lobster which was abundant.

In many countries, lobster was considered a dirty bottom-feeder and mostly fed to prisoners and slaves.

The species of lobsters are not the same as the Atlantic lobster caught off the N/E coast of North America. The lobsters that are caught off the coast of Iceland are from the Langoustines species ( rock lobsters ) and are more like large shrimp. Pre 1960s they were only caught accidentally when trawling for fish. The waters off Iceland are 200M - 1000M deep and traps can not be used to catch the lobsters. Starting in the 60s Icelandic fishermen could trawl for shrimp and lobsters with smaller nets. Pre 1960s the odd one or two rock lobsters were thrown back because it would take 4 or 5 to make a meal for one person.
