It was so they could train one eye to see well at night. Not sure if that's true but I read it somewhere.

This is true, pirates wore an eye patch so that they could dilate the pupils so that at night they could see better. The eye patch theory was tested on Myth Busters and it was determined that you can indeed see better at night if you had been wearing an eye patch during the daytime.
