Seeing that there is a food theme in the air tonight.

Thought I would start a thread asking everyone to give up their one secret ingredient that makes their burgers better than anyone elses burger.

For me... a mashed scallion paste. Tasty

Combination of onions, "mrs old lady brand" chinese hot chili (comes in a jar) a little rice wine vinigar, a little touch of sugar, and some thickening agent. Fry finely chopped onion in the mix until they are almost dead, add in the thickener until it becomes almost like a paste, drizzle on top of a burger (or a steak for that matter).

sweet relish (lots of it).

A lot of restaurants don't offer this so I bring my own jar along now if I know I'll be having a non-fast food burger out.

I crumble in some english stilton cheese into the ground beef before I grill the patty. Expensive and upmarket but you can't believe the flavour.

Homemade hot sauce.
And I make my own burgers, usually from ground up moose meat and bear.

I use a dry rub in the beef and smoke the ground beef for 2 hours, then add some onions, paprika, red pepper, egg, garlic, seasoning salt and a little 420 ground up in a coffee grinder. Then cook it on a charcoal grill to sear in the goodness and top it off with a cheese slice and bacon.
