We barely realize that the Newton laws do not apply to very little particles, and that quantum physics are much more present that we thought.
Regarding the hexagon, it is one of the only shape that can withstand an internal attraction force. We know that a circle is really good for that, but an hexagon is as well, more than a pentagon or a square.
I.E. if the the vortex has the north pole as center, the particles will go round and organize in the most stable shape they can. Usually it's a circle/sphere, but it might also be an hexagon, octagon, deca... up to an infinity of sides i.e. a circle.
